Carmen has received her designation of Certified Nutritional Practitioner from the Institute of Holistic Nutrition, graduating with First Class Honours. Carmen is a Clinical Herbalist upon completing a 5-year comprehensive biomedical program with Dominion Herbal College. As well, Carmen has completed Certification courses in Endocrinology and Clinical Detoxification. Carmen is Faculty at the Institute of Traditional Medicine, guiding students in Clinic, Materia Medica and Therapeutics. She is also a Medicinal Herb Consultant at Richter’s Herbs, and is a Professional Member and Registered Herbalist at the Ontario Herbalist Association.  Carmen has a private practice in Toronto where she guides her clients in detoxification, balancing hormones, longevity and healing the gut-brain connection using holistic nutrition principles, therapeutic diet applications and plant medicine. Carmen incorporates functional testing to determine the root cause rather than merely treat the symptoms.  Carmen delivers compelling corporate talks including Lunch & Learns, conferences, seminars & workshops. Carmen applies her biomedical understanding of the body, her experience with nutrition and plants as medicine and her own spiritual grounding to share with individuals who are ready to be proactive with their health, achieve optimal results and make lasting change.   • CD 011 Comparative Diets

    This course provides information about the holistic principles of food dynamics and their application for optimal health and well-being. Students learn and assess the many therapeutic benefits and limitations of several alternative diet approaches including: low-fat diets (Pritikin and Ornish), high protein diets (Dr. Atkins, Protein Power, Zone, Carbohydrate Addict), Glycemic Index and longevity diets (Macrobiotics, Okinawa). Various vegetarian plans are discussed with an emphasis on understanding protein complementation and Natural Hygeine diets (Hippocrates, Fruitarian, Juicing). The course will also address general cleansing diets for caffeine, alcohol and nicotine detoxing. With the knowledge gained in this course students will be able to evaluate and design customized health-promoting diets and lifestyle programs for any individual.
