Most Memorable Moment
I loved coming to school everyday where we are always greeted with warmth and kindness. The instructors certainly left their mark and their inspiring passion for nutrition will stick with me always. My most memorable moment would have to be my very first visit to the school, before I was even enrolled; simply knowing that I had found the right place. The most memorable time would have to be the summer months when we were able to sit outside, enjoy the sunshine, discuss amongst each other all that we were learning; the best farmer’s markets, share our home made food and learn from each other.
Favourite Class
Every course offered at IHN had its important role in providing the complete understanding of holistic nutrition that we walk away with at the end of the program. My personal favourites were Holistic Food Preparation where we were able to get back to the basics with traditional cooking methods and enjoy nourishing, life giving food. This class has had the greatest influence on how I am using my IHN education. Professional Skills was another highlight as we were given the opportunity to hone our public speaking skills on the topic of health and nutrition- a favourite topic of course.
Currently Doing in the Field of Holistic Nutrition
Upon completion of my nutrition studies, I spent ten weeks working as the in-resident nutritionist at The BodyHoliday at LeSport, a mind/body spa resort in St. Lucia.
I currently run a private nutrition and holistic lifestyle consulting practice in downtown Toronto. I keep myself busy writing a daily column for The Appetizer, the food and drink site of The National Post as well as write daily for my own site Making Love In The Kitchen. I host weekly cooking parties, private classes, workshops and lead seminars from my newly renovated loft kitchen. In January 2010 I will be making my ultimate dream come true, hosting a holistic health retreat called Nourish Your Soul at an organic estate on the tropical island of St. Lucia.
My past career in advertising has served me well, as it has given me a thorough understanding of how I can use mass media and the internet to help share all the information acquired at IHN. Through my website, I have published several e-tutorials that serve as guides to healthy living and have most recently published a full length e-book called The Healthy Cookie: Unbaked that documents my personal journey from a Crohn’s Disease diagnosis to perfect health. I am currently hard at work on a Foodoir, a memoir meets cookbook, that acts as a guide to healing from Crohn’s disease with my own story told through recipes.
In addition to my work with The National Post I have been featured in the Ottawa Citizen, Woman’s Day, CBC Radio 3, She Does The City, Our Neighbourhood Magazine, Momentum Magazine, Naturally Savvy and Neighbour Knowledge.
In the corporate realm, I work with several companies for group health programs including DraftFCB, Scotiabank, WellSpring and most recently Aegon Canada and RealStar Property Management.
I am available for one-on-one nutritional consultations, group lectures, education sessions corporate gatherings, lunch and learn seminars, private talks in people’s homes and for private cooking classes (awesome girls night out, restaurant alternative, date night or bachelorette parties).
