Most Memorable Moment
Coming to class every night and knowing, feeling very deeply, that this was what I wanted to do with my life. Who can forget our first course with Darko Prce, where a room full of strangers talked so candidly about bowel movements? The lasting friendships that formed with classmates have also been very rewarding. And, Elizabeth’s boundless enthusiasm and optimism were always refreshing. I remember being extremely proud and happy on graduation day.

Favourite Class
It is hard to pick just one because I learnt so much from each of them. That said, the Ayurveda course really resonated with me and I have incorporated that philosophy in my practice. I also loved Holistic Food Preparation, which inspired me to share this skill and knowledge with my clients. Murat Vardar, who taught our last class, Nutrition through the Lifespan, was a fabulous teacher and a great way to end two years of part-time studies.

Currently doing in the field of Holistic Nutrition

The same month I finished school, I quit my full-time job and moved to my new home near Peterborough. Initially, I did nutritional consultations in a chiropractic clinic while refining my business plan for the retreat. In May 2001, Thirteen Moons opened its gates inviting clients to rejuvenate amongst 186 acres of lush cedar forest. Though I retired in June 2020 and closed the business, the wellness retreat was very popular with female clients seeking individual getaways or wellness programs in a small group setting. The primary focus was always on the food – healthy, vegetarian, mostly organic and always yummy.

In addition to counselling and coaching clients and teaching cooking workshops, I was a contributing writer to local and regional publications and was a featured guest on the food segment of a cable television Healthy Living Series. I also published a popular monthly e-newsletter, Lunar Notes, offering subscribers nutrition tips and recipes, which are accessible on my website. In 2006 and 2015, I published 2 seasonal vegetarian cookbooks that are still available in pdf and hard copy.
